In celebration of the launch of our nautical-inspired kid's clothing, Petit Breton collection, I wanted to share with you my very own Galettes Bretonnes recipe.

Sophie's Galettes Bretonnes Recipe

makes approximately 18  

  • 120g soft salted butter
  • 75g caster sugar
  • 3 egg yolks (one for glazing)
  • 1 teaspoon water
  • 1/2 teaspoon salt
  • 200g plain flour
  1. Preheat oven to 160°C and grease a baking tray.
  2. Whisk egg yolks and sugar until creamy then add flour and salt. Continue whisking until it forms a thick dough. Cover and put in the fridge for 30mins.
  3. Roll out to a thickness of around 4mm and cut out the biscuits. Put on your prepared baking tray and brush with the remaining egg yolk mixed with the water. Leave for 5mins, then brush with the mixture again.
  4. Make a criss-cross pattern on the top of each biscuit and bake in a preheated oven at 160°C until golden brown.
