Sophie's Favourite Pancake Recipe

This year, Mardi Gras, as we call Shrove Tuesday in English, falls on 25th February. In celebration of the festivities of Pancake Day, Sophie, our founder and creative director would like to share her very favourite pancake recipe which will be sure to be making an appearance this Tuesday.

Sophie's Favourite Pancake Recipe

For six people - this will make approximately 18 pancakes:                 

  • 500 g Plain flour
  • 4 Eggs
  • 500 ml milk
  • 500 ml water
  • 4 tablespoons sunflower or groundnut oil
  • Pinch of salt
Put the flour in a big bowl and mix in the eggs with a balloon whisk. Add the milk and water gradually, continuing to whisk whilst doing so until the mixture is smooth and there are no more lumps. Add the oil and the salt. Put the mixture in a pouring bowl or use a ladle. Heat a big non-stick pan on the hob and pour in about a ladle full of the mixture, turning the pan to spread the pancake mix across the bottom in a very thin layer. Cook for about a minute or until the mixture pulls away from the side of the pan and turn the pancake over to cook the other side. Sprinkle some lemon juice and top with some sugar, roll up and enjoy!
