Easter Bunny Pancakes Recipe

Easy to make, and your little ones will love getting involved, this Easter Bunny pancakes recipe is great for an Easter morning breakfast. If you're in a rush, you can simplify this recipe by using ready-made pancake batter.

  • 1 large egg
  • 1 1/2 cups milk
  • 2 tablespoons butter (melted)
  • Optional: 1/2 teaspoon vanilla and cinnamon
  • 1 1/4 cups flour
  • 3 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • Blueberries and banana slices for the ‘eyes’, a banana cut in half for the ‘ears’, thin slices of apple for the ‘whiskers’ and a raspberry for the ‘nose’

Beat together the egg, milk, and melted butter. If you are adding vanilla, add it in at this time too. Make sure the butter has cooled to room temperature before adding the egg, so that the mixture doesn’t scramble.

Whisk the flour, baking powder, sugar, cinnamon (optional) and salt in a large bowl.


Step 3


Stir in the wet ingredients. The batter should be a little lumpy. Don't overbeat the batter or it will not stay fluffy and will result in a slightly tougher pancake.

Let it sit for about 5 minutes. It will puff up, if it is too thick, add a little more milk. If it looks too wet add in a tablespoon of flour.

Heat a little of the vegetable oil in a large non-stick saucepan and cook tablespoon-sized dollops of the batter at a time. You will need 1 medium-sized pancake for the ‘face’ and 2 small pancakes for the ‘cheeks’.

This is the fun part of the Easter Bunny pancakes recipe. To assemble your pancakes:
- Add the bigger pancake to the plate.
- Slice the blueberries and banana for the ‘eyes’ and place this on the larger pancake.
- Slice a banana in half and add it to the plate as the ‘ears’.
- Lastly, add the small pancakes and the apple slices as the ‘cheeks’ and ‘whiskers’ as well as the raspberry ‘nose’.
